Buttered mash, charred hispi, pan gravy.

A butcher's-pedigree gastropub two minutes from Hove seafront. Sussex produce, a Big Green Egg fired hard, famous Sunday roasts, and eleven boutique rooms up the stairs. From Ben and Pamela McKellar's Gingerman Group.
A proper pub, run by people who can genuinely cook, with a butcher's respect for where the meat comes from.
Ben McKellar trained in Michelin kitchens in France and at L’Ortolan before coming home to Brighton. In 1998 he and Pamela opened The Gingerman near the seafront, and The Ginger Pig followed: their take on the gastropub, full flavoured, unfussy, and led by the county’s best growers and farmers.
Nothing arrives here by accident. We buy whole, break it down ourselves, and cook it over fire the way a butcher would want it treated. This is the short journey from a Sussex field to your plate.
Menus that change as often as the produce does, built around the county’s best suppliers and whatever is at its peak that week.
A butcher’s heritage runs through the kitchen. We use the whole cut, nose to tail, with nothing good going to waste.
Slow smoke and fierce char. The BBQ does the heavy lifting, coaxing flavour out of aged Sussex beef, lamb and birds.
Traditional cooking, plated with care and no pretension. Ask the team about today’s specials and the wine to go alongside.
Full flavoured, traditional cooking from the county’s best suppliers. Long Sunday roasts, a proper breakfast from eight, fresh oysters and cocktails at the bar, and dishes worth crossing town for.

Buttered mash, charred hispi, pan gravy.

Aged Sussex beef, watercress, peppercorn.

Aubergine caponata and salsa verde.

Crispy chilli dressing, herbs, lime.

Shucked to order, shallot vinegar, lemon.

Chipotle braised, a crisp and rich bar favourite.
A proper Sunday, unhurried. Aged Sussex beef, greens with real bite, roast potatoes that earn their place, and gravy worth staying for. Served from half twelve, right through to eight, so there is no rush to give up the table.
